Healthy Snack Recipe: Shakeology Munchkins

I gave up processed sugar a few years ago due to chronic inflammation that sugar would only aggravate. I was diagnosed with Fibromyalgia and refuse to take medicine for fear of the negative side affects it would have on my body. Eliminating processed sugar and gluten out of my diet has made such a positive impact on my overall health. Weening yourself off sugar can be a very difficult process. I attribute my success to finding some go-to-recipes for snacks and desserts that filled the void until my body stopped craving sugar.  I would find recipes that mimicked the foods I decided to give up. Foods like: chocolate, donuts, cake, and ice cream. My Shakeology Munchkins are of my favorite, quick, sweet snacks and they don't come with all the negative side affects from sugar or unhealthy ingredients. Shakeology Munchkins - a healthy, nutritious protein packed snack!

Ingredients:
1 cup almonds
1/4 cup chocolate vegan Shakeology
1/2 cup unsweetened coconut flakes

Directions:
Combine above ingredients together in a food processor; process into a fine powder.

Ingredients:
1 cup pitted dates (soak in water until soft)
1 1/2 Tbsp. coconut oil
1 Tbsp. pure maple syrup

Directions:
Add above to almond mixture and pulse until dough-like consistency forms. Roll better into small bit size balls. Roll balls in additional coconut flakes. Store in airtight container or freeze to preserve freshness.
