Healthy Lunch Recipe: Brown Rice Wrap Pizza

This is one of my favorite quick and easy lunches. This recipe is inspired by FIXate cookbook and is 21 Day Fix approved. I typically cook it out on the grill to avoid heating up the oven and the house on hot days.

Ingredients:
1 Brown rice tortilla wrap
1 Tbsp. olive oil
2 Tbsp. tomato/pizza sauce (I make my own)
Garlic powder
1 cup chopped vegetables (mushrooms, peppers, onions, broccoli)
4 Tbsp. shredded mozzarella cheese or mixed cheese of choice
2/3 cup of diced turkey (optional)

Directions:
Preheat grill on medium heat. Coat wrap with olive oil, then layer tomato sauce and sprinkle garlic powder. Add cheese followed by vegetables and/or turkey. Place on grill for about 10 minutes or until cheese is melted and crust is at desired crispness.
