Healthy Dinner Recipe: Pineapple Turkey Kabobs

My family loves this healthy dinner.  I love it because it's simple to make and the kids help me.  They think it's fun to assemble the kabobs. This recipe is inspired by FIXate cookbook and is 21 Day Fix approved. 2 skewers equals 1/2 green, 1/2 purple, 1 red container if you're following the 21 Day Fix nutrition plan.

8 skewers
1 lb boneless skinless turkey cut into 1-inch pieces
1/4 cup gluten free soy sauce (reduced sodium)
2 tsp. sesame oil
2 tsp. grated ginger
2 cup pineapple chunks (preferably fresh but canned will also work)
1 medium red bell pepper cut into 1-inch chunks
1 large red onion cut into 1-inch chunks

Place turkey pieces in a glass container or plastic bag. Add soy sauce, oil and ginger. Cover/seal and shake gently to mix. Refrigerate at least 30 minutes to marinate. Preheat grill on medium heat. Assemble turkey, pineapple, pepper and onions on the skewers; alternating between all ingredients. Grill skewers on a closed grill for 4 to 5 minutes on each side or until turkey is done.

Serve immediately. Best paired with a side of fresh fruit such as watermelon and a side of roasted sweet potatoes.
