Healthy Dessert Recipe: Homemade Chunky Monkey Ice Cream

This FIXate inspired non-dairy ice cream is unbelievably yummy AND easy to make!

Ingredients:

3 medium bananas cut into chunks and frozen.
3 Tbsp. peanut butter
Unsweetened almond milk
4 tsp. cacao nibs or chopped chocolate (see recipe)
4 tsp. chopped walnuts or sliced almonds

Directions:
Freeze banana chunks for about 4 hours. Place frozen bananas and peanut butter in blender. Blend until smooth. Add 1 to 2 Tbsp. almond milk if needed depending on desired texture. Divide ice cream between 4 serving bowls and top with chocolate and nuts. This melts extremely fast, serve immediately.
