Healthy Chocolate Treats!

Halloween can be a scary time if you have serious health and fitness goals.  The good news is there are healthy treat recipes that can help bridge the gap between having to say NO vs. answering the candy bowl that's calling out your name.

Simple Chocolate Recipe

This chocolate takes less than 5 minutes to make and has 3 HEALTHY ingredients.  It helps me have NO REGRETS!

Ingredients:

2 Tbsp. Coconut Oil, softened*
4 Tbsp. Cacao Powder
2 Tbsp. Maple Syrup

Directions: 

In a small bowl, combine all 3 ingredients and mix until smooth consistency. Taste and adjust to desired sweetness. Pour mixture into mini cupcake tins lined with papers or flexible mold that will allow for the finished pieces to pop out easily.  Place in refrigerator for 10 minutes.  ENJOY!

*It’s important that the coconut oil is not melted, or the coconut oil and cocoa powder will separate while setting. For a smooth texture, solid or softened coconut oil is best.

** Note ** these raw chocolates melt very easily and should be stored in the freezer.

Healthy Peanut Butter Cups

Use the chocolate recipe from above.

Fill mini-cupcake liners with enough to cover the bottom (1 tsp.).  Place in the freezer for 5 minutes or until hardened. Once the bottom layer is solid, add a drop of any nut butter of choice to the center.  Depending on the consistency of the nut butter you might have to press it down so the chocolate you pour on top will cover the sides and top. Cover nut butter with chocolate. Place in freezer for about 10 minutes. ENJOY!

Bananas, strawberries, raspberries are fun fruits to experiment with the above recipe.

Turtles: Chocolate, Caramel with Sea Salt

Use the chocolate recipe from above.

Ingredients:

7 ounces dates
1 Tbsp. tihini

Puree dates and tahini in a blender or food processor until smooth.  Freeze "caramel" mixture for 15 minutes. Fill mini-cupcake liners with enough chocolate to cover the bottom (1 tsp.).  Place in the freezer for 5 minutes or until hardened. Once the bottom layer is solid, add about 1/2 inch ball of "caramel' to the center.  Press the caramel ball down with your thumb so the chocolate you pour on top will cover the sides and top. Cover with chocolate and sprinkle a few crystals of sea salt. Place in freezer for about 20 minutes. ENJOY!

Too much of a good thing can also be bad, just because it's healthy doesn't mean you can over indulge.  MODERATION is key!
